Gut-Healthy Winter Congee

Start off your new year on a positive note with this gut-healthy winter congee!

Congee is a savory rice porridge that originated in Asia and has become a classic comfort food enjoyed across the world.

This recipe is great for gut health specifically thanks to the inclusion of ginger, goji berries, cinnamon and cardamom, and the nuts and seeds. All of these ingredients provide great health benefits such as reduced inflammation, fiber for digestion, and immune support.

Here is the full recipe:
1/2 cup white or brown rice
6 cups water or milk of your choice
1/4 cup dried goji berries
1/4 cup diced fresh or dried dates
1-inch piece of fresh ginger, grated or sliced
1/2 teaspoon cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon sea salt
1 tablespoon honey or maple syrup

Toppings: Chopped walnuts or almonds

First wash the rice thoroughly until the water runs clear. Next, in a large pot, combine rice, water (or almond milk), and ginger. Bring to a boil, then reduce the heat to low. Stir occasionally to prevent sticking. Cook for 45-60 minutes, or until the rice breaks down and the mixture becomes thick and porridge-like. Stir in goji berries, dates, cinnamon, cardamom, and salt. Cook for another 5-10 minutes to allow the flavors to blend.

Top with nuts and seeds and serve warm with maple syrup or honey!
